Gibsons Bar & Steakhouse

One of my favorite traditions since moving to Chicago has been making a New Year’s Eve reservation at Gibsons Bar & Steakhouse. There’s nothing quite like dining at a classic Chicago steakhouse to ring in the new year, and every time I visit Gibsons, both the food and overall experience live up to the hype.
Starting with cocktails, Gibsons is absolutely the kind of place where ordering a martini feels essential. One of my personal favorites is a pickle martini, which adds a twist that pairs perfectly with the richness of a steakhouse meal.

For appetizers, the shrimp cocktail is a must-order. The shrimp are impressively large and high quality, served chilled with a flavorful cocktail sauce that has just the right amount of kick. Pairing it with the classic Caesar salad creates the perfect balance of fresh and indulgent to start the meal.

You simply cannot dine at Gibsons without trying the lobster bisque. This creamy, rich soup is one of the best I’ve had in Chicago, packed with flavor and perfectly comforting—especially during the winter months. It’s easily one of the standout menu items and worth ordering every visit.

While I typically go for the filet mignon at Gibsons, this time I wanted to try something different and ordered the miso Chilean sea bass. Splitting the sea bass and filet turned out to be the perfect choice.
The sea bass was incredibly tender and flavorful, served with a delicious sauce alongside mushrooms and peas that complemented the fish beautifully. The filet mignon, as expected, was cooked perfectly and served with a rich, creamy sauce that elevated the dish even more.

Gibsons is always a fantastic dinner choice, but it feels especially special on New Year’s Eve. One of the things I love most is that they don’t require a fixed holiday menu, allowing guests to order their favorites from the full menu. The live music and high-energy atmosphere create a festive environment that makes the night feel like a true celebration.
