Maple & Ash is already a well-known staple in Chicago’s Gold Coast, but when it introduced Eight Bar, I knew it was time to try this elevated take on happy hour dining in Chicago. Located just below the steakhouse, Eight Bar offers a more casual setting while still delivering on flavor, ambiance, and top-notch cocktails.


We kicked off our experience with the Cosmo-ish, a cocktail made with vodka, Cointreau, strawberry lavender, and citrus. It was the perfect balance of sweet and refreshing—ideal for a warm-weather sip on the patio.

When it came to food, Eight Bar’s happy hour menu truly impressed. We ordered the Crispy Fried Chicken Karaage, the Spicy Tuna Handroll, and the King Crab Handroll. Each bite brought something unique: the chicken karaage was super crunchy, while the handrolls were incredibly fresh and light, especially the King Crab. These elevated bar bites offered a great mix of flavors without feeling too heavy.

Whether you're looking for a casual after-work drink or a nice patio to enjoy with friends, Eight Bar’s happy hour is a must-visit. Great deals, delicious small plates, and refreshing cocktails make it a great happy hour spot in Chicago.
