While spending the weekend in Fulton Market, I stopped by Discourse Coffee during my morning walk to try one of their more creative specialty drinks. Known for its inventive menu and unique flavor pairings, Discourse Coffee has become a standout in Chicago’s coffee scene, especially for those looking for something beyond a traditional latte or matcha.

I ordered the Flora, a matcha drink made with lavender honey syrup, rosewater, candied lemon powder, and French sea salt. The combination was very balanced—floral notes from the lavender and rosewater blended with earthy matcha, while the candied lemon added citrus and the sea salt deepened the overall flavor.
