Evette’s is a Chicago restaurant I’ve walked past many times, but I finally decided to stop in and try one of their most unique menu items: the Hash Brown Sandwich. Made with two waffle hash browns as the “bun,” eggs, chipotle mayo, chimichurri, American cheese, and bacon, this breakfast sandwich packs a surprising amount of flavor into every bite.

My first thought while trying it was just how much flavor was packed into one sandwich. I loved the combination of the smoky chipotle mayo and fresh chimichurri, while the crispy waffle hash browns made the perfect replacement for a traditional bun. The bacon and melted American cheese brought everything together, making this a breakfast sandwich I would definitely order again.
