Blame Butter

Blame Butter is one of Chicago’s most buzzed-about new bakeries, known for its creative and artfully made pies. During a recent Sunday pop-up in River North, Chicago, I braved the line to try a few slices before they sold out—and it was absolutely worth it.
The menu currently features four rotating pies, each with its own bold flavor profile:
No. 1: Affair of the Hart with huckleberry, lemon, and vanilla cream
No. 2: Dying the Honey Pine with sumac, orange blossom glaze, thyme, mint, and strawberry
No. 3: The Gateway with Italian plums, raspberries, and a crunchy outer crust
No. 4: 666 with truffle-like chocolate chess filling infused with Tonka beans and a toasted cocoa nib ganache.
While I wanted to taste all of these, I was only able to try the No. 1, 3, and 4 because of an allergy to No. 2.
I was able to try Affair of the Hart, The Gateway, and 666. Each slice was unique and packed with flavor. The Affair of the Hart was light, creamy, and slightly tart. The 666 chocolate pie was rich, velvety, and decadent. My personal favorite, however, was The Gateway—the tart plums and raspberries paired perfectly with the crunchy crust for a bite that was bold yet balanced.
Blame Butter has quickly proven itself to be one of the most exciting Chicago pop-up bakeries, offering pies that are as visually stunning as they are delicious. If you love desserts that push flavor boundaries, this is a must-try stop in the Chicago bakery scene.
